Galangal, is an important and valuable spice that, according to St. Hildegard of Bingen, should be consumed every day. It is intense and quite sharp in flavor. Therefore, it is usually added in small pinches (1-3 pinches) to meals (breakfast, lunch, dinner, as well as desserts, bread, cakes, and cookies).

St. Hildegard says:

“Whoever suffers from pain and is threatened by weakened blood circulation [fainting], should immediately eat a sufficient amount of galangal, and it will improve.”

“A person who has a burning fever should crush galangal, and then drink the resulting powder in spring water. It will extinguish the burning fever, for the coolness and sweetness of spring water, combined with the heat of galgant, reduces the heat of the fever.”
